Carob Sweet Potato Brownies (Vegan)
Who doesn’t love a rich, yummy brownie? This is a healthier twist on a traditional cocoa powder brownie, which for some of us can be quite stimulating, especially if had later in the day or an evening. Admittedly, I made this exact recipe with cocoa powder for a special occasion for my family one day, but had a hard time falling asleep that night. Subbing carob made the brownies milder and gave it a sweet caramel flavor which I loved!
Ingredients:
1 1/2 cups rice flour
1 medium or 2 small size sweet potatoes,boiled and mashed
1/2 cup carob powder
1 1/2 cup organic cane sugar
1/2 cup of melted vegan butter or ghee
1/2 cup water
1/2 cup vegan chocolate chips
2 tsp vanilla extract
3/4 tsp salt
1 tsp cinnamon (optional)
Instructions:
Line 8x8 inch pan with parchment paper
Process all ingredients except for chocolate chips
Fold in chocolate chips and pour batter into lined pan
Bake the brownies about 45-50 minutes
Cool then slice and enjoy!
